New York College of Traditional Chinese Medicine Eastern Nutrition Class Recipes
In the Eastern Nutrition Class, a study of nutrition is presented from the perspective of traditional Chinese medicine. The recipes include the healthful function of each dish and each ingredient. Here are the students enjoying the feast at the end of the class! One student brought individual salad ingredients, and each student chose based on their own Traditional Chinese Medicine diagnosis. Dr. Zhao's Eastern Nutrition class is a favorite!
Black-boned chicken & Chinese Yam soup (printer friendly .pdf) by Siuling Zhang

Ingredients
One whole black-boned chicken (Silky Chicken)
10 cups water (enough to cover chicken)
1 pound fresh Shan Yao (Chinese Yam)
5 Chinese dates (medium size)
6 sliced ginger (9 grams)
3 tsp cooking wine
1 tsp rice vinegar
0.5 tsp sea salt
Ingredient Functions

Black-boned Chicken – Sweet & Neutral. It enters Spleen, Liver, and Kidney channels. It nourishes liver & kidney Yin and strengthens spleen & tonify Middle-Jiao.

Shan Yao – Sweet & Neutral. It enters Lung, Spleen, and Kidney channels. It is good to tonify the Qi, nourishes Lung, Spleen and Kidney Yin, and binds the essence.

Chinese Dates – Sweet & Warm. It enters Spleen and Stomach. It nourishes the blood, calms the spirit, and strengthens the spleen.

Ginger – Acrid & Warm. It enters Lung, Spleen, and Stomach. Ginger is commonly used with Chinese dates to harmonize the Wei Qi and Ying Q
Recipe Functions: It is good to nourish the Yin, tonify the Qi , and strengthen the spleen.
Applications

For night sweating caused by Yin deficiency.

For lack of appetite and loose watery stool caused by Spleen Qi deficiency
Directions

Cut Shan Yao into 1 inch cubes.

Combine black-boned chicken, Shan Yao, water, Chinese dates, and sliced ginger in a large pot and bring to a boil.

Add cooking wine, vinegar, and sea salt.

Simmer for a hour (skimming frequently).

Test chicken with a fork to determine when it is tender and fully cooked.

Check for flavor, adding more salt and a bit of white pepper if preferable.

Serve hot.
Double steamed mutton with Hou Tou mushroom and carrot (.pdf) by li biao jiao
Ingredients:
99g-Hou Tou Mushroom (Hericium Erinaceus) 猴头菇-清香
1-Whole Carrot 红萝卜-清甜
900g-Mutton 羊肉-甜
1-Scallion 葱-辛辣
9-Red date 红枣-甜
9g-Gou Ji berry 枸杞子-甜
3-Black Mushroom 黑蘑菇-清香
3-Pieces Fresh Ginger 生姜-辛辣
1-Quarter dried tangerine peel 陈皮-清香
Ingredient Function:
1. Hou Tou Mushroom (also called Hericium erinaceus, Bearded Tooth Mushroom, or Bearded Tooth Fungus)
In traditional Chinese medicine this mushroom has long been considered a medicinal mushroom and a study on rats in 2005 showed that some compounds in the mushroom, like threitol, D-arabinitol, and palmitic acid may have antioxidant effects, may regulate blood lipid levels and may reduce blood glucose levels. (1987) reports that pills of this mushroom are used in the treatment of gastric and esophageal carcinoma. (from Wikipedia http://en.wikipedia.org/wiki/Lion%27s_Mane_Mushroom)
2. Carrot: Strengthening the spleen, aiding digestion, reinforcing the liver, promoting the acuity of vision.
3. Mutton: Nourish Blood and tonify Qi, warm the Middel Jiao and kidney.
4. Scallion: Reinforcing the Stomach and aiding digestion. Reduce the some smell of Mutton.
5. Red date: Tonify blood, strengthening the spleen. (Red)
6. Gou Ji berry: Tonify Kidney and nourishing the liver, good for eyes.
7. Black Mushroom: Reinforcing the spleen, and replenishing Qi, induces an immune response.
8. Ginger: Warm in nature, expel and prevent coldness, and propensity for the lung, spleen and stomachs.
9. Dried tangerine peel: Promote circulation of the Qi, strengthen the lung and spleen Qi.
Recipe Function:
Warm the spleen and stomach and aiding digestion, detoxifying, nourish the blood. (Tips: Good for winter time)
Applications:
Insomnia, fatigue, poor appetite, induce an immune response, diabetes, high cholesterol.
Method:
1. Wash and clean all ingredients.
2. Soak Hou Tou Mushrooms into warn water with light salt, over one hour, squeeze out the water until water runs clear, and inside soft. (Tips: the function can clean bitter taste from Hou Tou Mushrooms)
3. Soak Black-Mushroom over one hour with warm water until soft.
4. When finish soaking; Chop the Hou Tou Mushrooms, Black-Mushroom, Mutton and Carrot into small pieces.
5. Scald Mutton into boil water 3 minute with Ginger and Scallion, rinse in cold water. (Tips: Reduce bad smell)
6. Put all ingredients and warm water into a double-steaming pot. Add water double-steam over low heat for about 2-3 hours until mutton tender. Sprinkle salt to season, drink the soup and eat the mutton and mushrooms.
White Wood-Ears, Pears, South & North Apricot Kernels with Crystal sugar Soup (.pdf)

Ingredients:
1 big size of dried White Wood-Ears
4 Ya Li Pears
6 grams of South Apricot Kernels, and 6 grams of North Apricot Kernels
Little portion of crystal sugar
Notes: South & North Apricot Kernels should not be used in large amount, should be used 6-9g
Ingredient Function:
- White Wood-Ears: Sweet flavor, neutral in nature. It moistens the Lung and nourishes Yin.
- Pears: Sweet and slightly sour flavor, cool in nature. It clears heat, and promotes the production of body fluids. It also moistens dryness, dissolves phlegm, moistens the Lung, and nourishes Yin.
- South Apricot Kernels: Sweet and sour flavor, neutral in nature. It moistens the intestine.
- North Apricot Kernels: Bitter flavor, warm in nature and slight toxic. It relieves cough, and eliminates phlegm.
- White Wood-Ears, Pears, South and North Apricot Kernels all are propensity for the Lung and Stomach Channels.
Recipe Function:
It is good for moistening the Lung and nourishing Yin; clearing heat and promoting the production of body fluids; moistening dryness and dissolving phlegm; moistening intestine; relieving cough and eliminating phlegm.
Applications:
Dry cough due to Lung dryness and Lung Yin deficiency. Dry throat, mouth, poor appetite, thirst and constipation due to Stomach Yin deficiency. Great thirst due to fever. Cough due to Lung heat or Phlegm heat. Use for constipation; for cough with phlegm.
Directions:
- Put White Wood-Ears into boiling water for a minute, then drain out water, cut out the yellow bottom part, and keep the white part. Separated them in pieces.
- Washed, peeled the skin, cut out the seeds of the Pear, then chopped it into small pieces, and put them into the pot with cold water immediately, one pear by one pear.
- Washed the South and North Apricot Kernels.
- Put all ingredients into the slow cooker with 12 cups of cold water added, then cook in high process for 4 hours and 30 minutes.

Korean “Sushi” Rolls Kim Bap (.pdf) 김밥by Jang Hun Lee
Ingredients:
- Dried seaweed (nori)- 4 sheets
- 2 cups cooked rice
- 2 tsp sesame oil
- 2 tsp salt
- TRADITIONAL FILLINGS
- 1 carrot, julienned
- cucumber, cut into long strips
- 2 eggs
- beef (bulgogi)
- 1/2 pound of spinach, parboiled
- pickled radish, cut into strips
- imitation crab (optional)
- fishcake (optional)
- ALTERNATE POPULAR FILLING SUGGESTIONS:
- smoked salmon and cream cheese
- kimchi and cheese
- spam, mayo, and veggies
- ham and cheese
- tuna salad with romaine lettuce and cheese
- fresh or seasoned vegetables for vegetarians
Preparation:
- When rice is almost cooled, mix with sesame oil and salt.
- Stir fry carrots briefly with a dash of salt.
- Stir fry cucumber with a dash of salt.
- Whisk eggs until evenly yellow and fry into flat omelet.
- Cut cooked egg into long strips.
- Cook bulgogi according to recipe directions.
- Using a bamboo sushi roller or a piece of tin foil, lay the dried seaweed shiny side down.
- Spread about ½ cup of rice onto 2/3 of the seaweed, leaving the top 1/3 bare (if you moisten your fingers or a spoon to pat down the rice, you'll get less of a sticky mess).
- Lay the first ingredient down around 1/3 of the way up from the bottom of the seaweed.
- Lay the other fillings down on top.
- Roll from the bottom (as if you're rolling a sleeping bag), pressing down to make the fillings stay in.
- As you continue to roll, pull the whole thing down towards the end of the bamboo mat.
- Spread a tiny dab of water along the top seam to hold the roll together.
- Set aside and continue with other seaweed sheets.
- Cut each roll into 7-8 pieces.
Recipe Function:
Warm the spleen and stomach
Application:
Poor appetite, insomnia, high cholesterol, and good for picnic.
Jeyuk Bokum - Korean Style Spicy Fried Pork
Ingredients
- Sliced pork
- Garlic
- Green pepper
- Onion
- Carrot
- Red pepper pods
- White sesame
- Oligosaccharide (or sugar)
Directions
- Chop all vegetables and put in the large pot
- Put sliced pork into the pot
- Put red pepper paste, 3 T Oligosaccharide (or sugar) and 3 T white sesame into the pot
- Mix all together
- Cook in the frying pan
Function
The main ingredient, pork, is good for nourishing yin and moistening dryness. In Korean food, garlic is often used with meat. Garlic has the function of aiding digestion and detoxification. Carrot is good for vision problems due to a deficiency of liver yin.
Application
Dry cough, constipation, yin deficient constitution, insufficient lactation, and dry skin syndrome. Indigestion by warming middle jiao and strengthening spleen. Blurred vision due to a deficiency of liver yin.

Ingredients:
- Apricot
- Peanuts
- Black bean
- Tangerine
- Celery
- Pears
- Green bean
- Garlic
- Carrots
- Watermelon
- Red bean
- Ginger
- Lettuce
- Black Wood ears
- Spinach
Ingredient Function:
Apricot – Promoting production of body fluids, moistening the lungs
Celery – Clearing up heat, tranquilizing the mind, calming the liver
Carrot – Clearing heat & detoxifying, strengthen spleen
Black bean – Nourishing the KI yin, reinforce the SP, remove dampness
Green bean – clearing heat and damp, relieving summer heat
Red bean – Reinforce the SP and remove damp
Spinach – Moistening and lubricating the intestines, improving vision
Peanuts – Reinforce SP, promote lactation after child birth
Pears – clearing heat, promoting the production of body fluids
Watermelon – Clearing heat, promoting the production of body fluids
Black Wood ears – Tonify KI, nourish yin
Tangerine – Promoting the production of body fluids
Garlic – Warming the middle Jiao and reinforcing the ST and aiding in digestion
Ginger – warming the middle jiao, arresting vomiting, expel wind-cold
Directions:
Cut everything into desired size and place into separate dishes
Cook black bean, red bean, green bean, and black wood ears in separate pots for 30
minutes
Every person’s body is different so in this project I wanted the individual to pick and choose their own ingredients according to what diagnosis they have.
